Hey Temple Builders! I wanted to share with you a side I enjoy several times a week at the Passini household. I LOVE french fries but I don’t like the gut or gross feeling they give me. Enter red potatoes!

Red potatoes are high in fiber which will make you feel fuller longer. They are also nutrient rich, containing 27 mg of vitamin c, 37% more potassium than bananas, and  vitamin b. They are low in sodium, protect against colon cancer, and reduce cholesterol levels. Poratoes contain a high level of anti-oxidants which fight free radicals that our bodies produce daily.

Red potatoes are great for baking, broiling, or cooking on the stove top. They don’t do well mashed or deep fryed, as their texture becomes sticky.

For this recipe, I cubed my potatoes so they cooked faster, but you can cut them long ways so they resemble fries.

Ingredients:

  • 5-6 medium sized red potatoes
  • 1 teaspoon pepper
  • 1 teaspoon garlic
  • 1 teaspoon parsely
  • 1 teaspoon salt
  • 1 large baking tray with foil
  • Pam for cooking spray

Directions:

  1. Spray your foiled tray with Pam.
  2. Preheat your oven to 400 degrees
  3. Rinse your red potatoes under the water, and begin cutting them length-wise and then in half to form cubes.
  4. Toss them on your baking sheet, and add the pepper, garlic, and parsley. Note: you can also use extra virgin olive oil to coat your potatoes. Make sure to measure out 1 tablespoon, as that is enough to coat the entire batch.
  5. Line them flat on your tray, and make sure none are stacked on each other so they can cook evenly.

  1. Bake for 20 minutes at 400, then take them out to flip.
  2. Bake another 10-15 minutes, depending on the level of done-ness you desire. I like mine crispy on the outside, so I let mine stay in the oven a bit longer.
  3. Remove from oven and add the salt. Toss evenly together and serve.
